CLIMAVORE: Educate | Cooking Sections
CLIMAVORE: On Tidal Zones is a long-term project by ATLAS Arts and Cooking Sections (Daniel Fernández Pascual & Alon Schwabe), which began in 2016. Phase two of the project, CLIMAVORE: Educate, aims to build on the initial research conducted and the public programme to engage younger generations in a pilot education programme.
The core of this is creating five ‘interventions’ into the Hospitality and Practical Cookery curriculum of talks and interactive practical sessions supported by local experts, including chefs and food producers, the workshops will foster knowledge of, and engagement with, sustainable aquaculture. This will culminate with a celebratory meal at the oyster table in Bayfield, devised with the students to mark the end of the workshops and initiate the CLIMAVORE: Apprenticeship programme.
CLIMAVORE: Apprenticeship will see ATLAS partner with restaurants and cafes across the island to offer apprenticeships for the high school students in the summer holidays. With chef support, the apprentices will create and develop their CLIMAVORE dish; act as advocates for the project to members of staff and diners. To culminate the apprenticeships, students will create and serve a CLIMAVORE menu via a food truck at Skye Live to promote sustainable aquaculture on Skye.
CLIMAVORE: Educate will also see us collaborate with Portree Primary School and Skye-based artist, Philippa Thomas on a creative seashore project. Using the oyster table as the focal point we will work with 28 primary school students, exploring the themes of CLIMAVORE
through engagement with the foreshore. A small publication will be created by the pupils in response.
